I’m obsessed with sushi, I mean seriously OBSESSED! I could eat it almost every day. There is an art to making sushi, but it’s fairly simple to make a yummy bowl to enjoy at home. If you are using raw fish make sure it’s extremely fresh, and should NOT smell like fish, but like the sea.
This is a single serving…because I’m the only sushi aficionado in the home.
rice:
1 bowl of steamed rice 3/4 full (I make a small pot and repurpose the left overs)
1 tblsp of rice wine vinegar
1 tsp of sugar
1 1/2 cups of “scraped” tuna
marinade:
4 tbsp. soy sauce
1 tsp ginger
1 tsp garlic
2 tbsp. chopped green onion
several drops toasted sesame oil
wasbi to taste
1/3 cup chopped cucmber (english/hot house, japanese or lemon cucumber prefered)
1/3 cup chopped Haas avacado
Directions:
Scrape the tuna with a spoon to remove meat from the fibrous connective tissue. Mix marinade ingredients together and pour 3/4 of it over the tuna and cover and refrigerate for an hour.
Mix vinegar and sugar until dissolved. Sprinkle mixture over rice one teaspoon at a time until rice is the desired stickiness and sweetness.
Assemble rice on bottom, then tuna in the center then veggies, use the rest of the marinade as a sauce. Enjoy, this is one of my FAVORITE treats, I always set aside some tuna for this dish. It’s really quite easy.
