Tuesday:
Applesauce Salmon, roasted Asparagus, and tomato basil bisque
-well my origional plan was to make the tomato bisque, but the safeway select brand was on sale when I was grocery shopping so I cheated…Unfortunately I still haven’t perfected cooking fish in my stainless steel pans so it stuck pretty badly. I think part of the problem is the pans I have, have rather steep sides so Im not able to get underneath my fish without damaging it
Wednesday:
Lobster & Shrimp Gumbo
-Ok so I found fresh (itty bitty) Lobsters on sale, so I decided to try a gumbo soup mix…waste of time and money. I hated the flavor of it, so instead of wasting my seafood, I started a roux with equal parts butter and flour and cooked it until it was a light brown and added chopped celery and onion (unfortunately I didn’t have any peppers) and cooked it until the onions were soft and the roux was a dark brown. I used the soup made from the gumbo mix to make up for the mising ingredients I had and finished it off with the lobster, shrimp and some chicken. It wasn’t half bad, but now I want to try gumbo from scratch. We also had some yummy honey biscuits.
Thursday:
Seared Pork chops, Applesauce, Garlic Mashed Potatoes & corn on the cob
-I like to season my pork chops and sear them fast and hard in a stainless steel pan and then deglaze my pan with a little water and reduce the liquid to make a sauce for the pork. I also take unsweetened applesauce and add half a rough chopped apple, some water and half a tbsp of cinnamon and simmer till fresh apple is soft. The garlic mashed potatos are a new favorite of kevin’s (kinda funny considering he HATED potatos when we got married). Think baked potatoes with the toppings you like then mashed. Sour cream, butter, cheddar cheese, salt, pepper and crushed garlic…yummy.
Friday:
Carne Asada Tacos
We bought this marinaded carne asada at costco and froze it…tonight will be the first time we’re trying it…
Saturday:
Chicken Chimichanga’s
Kev’s been begging me to make these for him…and begging…and begging. Cook the rice in chicken broth, with a little salsa and a little of the juice from canned peppers. Poach some chicken breast tenders in the same liquid. You have to find Gigantic flour tortillas for this…spread some refried beans on the tortilla, layer rice, chicken and load on jack cheese and roll up the tortilla. Now comes the part that makes it yummy…FRY it. Oh my goodness, fried yummy goodness. Serve with sour cream and guacamole.
Saturday:
Tortilla Soup
So I have a pretty darn good recipe for tortilla soup, but I want to experiment and come up with a no bean version…so I want to use a chicken and vegetable broth with rice chicken and peppers with lots of fresh pico de gallo, avacado and tortilla strips/chips on top….this is the way they make it at one of our favorite mexican restraunts. I wanted to make this after Kev’s chimichanga night so I can use the left over rice in this dish.
Sunday:
Smoked salmon & Zucchini Fritatta
Oh yeah baby. Suatee the the zucchini first (so they don’t add moisture to the fritatta during baking) add a little chopped onion and when finished add sliced smoked salmon and pour into lightly greased baking dish. Beat enough egg to cover filings with a little milk and a little bisquick and parm cheese, pour over filings. Add any additional cheese mozerella or jack in this case and stir gently.
